Once you try this recipe, it will wreck you from any other way of having zucchini. It's toasty, lightly crunchy, cheesy, and tastes so fresh. One added benefit is because it's largely zucchini. After enjoying a hardy serving of this Zucchini Parmesan, you're left with everything but an uncomfortable stomach.
The size of your air fryer will determine how many slices you can cook at a time. In our opinion they are best right out of the air fryer while they are still hot, crunchy and the cheese is melty, however they do hold up pretty well after waiting for a bit to be eaten.
Our family has adapted an eat them as they come sort of family dining experience. The smell of them cooking draws everyone to the kitchen, followed by a wonderful round one taste experience. Then, while the diners are eating, round two is cooking. Usually they are finished with the first one and eagrly waiting for the next ones to come out.
Based on if we have company, we may have to top off our flour, egg or bread crumb bowels and slice up more zucchini. However you enjoy them, I'm confident you and your diners will. Eating is a great time to bond with family or friends. Don't miss this opportunity.

Ingredients

2 pounds of an extra large fresh Zucchini
1.5 cups Panko Bread Crumbs
1.5 cups Grated Parmesan Cheese

¼ cup finally chopped Fresh Parsley
1 teaspoon Italian Seasoning
½ teaspoon Sea Salt
¼ teaspoon Black Pepper
8 oz Shredded Mozzarella Cheese
6-8 oz Marinara or Pizza Sauce
1 cup whole wheat or all purpose flour
2 Farm Fresh Eggs
Directions
Slice your extra large zucchini into 3/8” thick slices. This should be about the thickness of your finger and blot dry the slices with a paper towel.
Heat air fryer to 400F
Place flour in a bowl large enough for the zucchini slices to lay flat on the bottom and set aside.
In a separate bowl, scramble two eggs and set aside.
In another separate bowl, combine panko bread crumbs, grated parmesan cheese, chopped parsley, Italian seasoning, salt and pepper, then whisk together thoroughly. This is your breading mixture.
Place zucchini slice in bowl with flour. Flip and rotate as needed to thoroughly coat both sides and all edges with flour.
Place floured zucchini slice in mixed egg. Flip an rotate as needed to coat the entire surface of the zucchini slice with egg.
Place egged zucchini slice in breading bowl. Flip and rotate, using your hands as needed to thoroughly coat the zucchini slice with a hardy coating of the breading mixture.
Place the breaded zucchini slice in the air fryer and repeat with remaining slices until one layer of the air fryer is full.
Cooking times vary with different air fryers and the thickness of your zucchini. Cooking time should be around 5-8 minutes. Keep an eye on them and slide them out when they are golden brown.
Sprinkle mozzarella cheese on each slice to desired cheesiness and slide back into the air fryer for a few more minutes. Again, keep an eye on them until you get the time down.
Remove cooked slices from the air fryer and place on a cooling rack. Then, with a large soup spoon, spread some of your marinara or pizza sauce across the top of the cheesy toasty delicious Parmesan Zucchini and serve.
